Upon creating a weapon with the "daylight" spell, I wanted the weapon itself to be the only valid target for the spell. Added the restriction - didnt show up anywhere.
Not even sure what "just link item and character" means.
Right now the only way to see the restriction is to edit the item and that is not what I want mid-game.

You are probably best off putting it in the item's actual description.
To "link" something, open the page in your browser, copy the URL, paste into the comment box, profit. It is short for hyperlink and is a very important tool in online communication. The term has been around since the 80s but didn't become common use until the mid 2000s when internet culture took off.

It seems that “restrictions” or customizations to the spells that are added to Homebrew items are not shown to the players anywhere.
I’ve created an item with limited detect magic abilities but on the character sheet that custom text cannot be found (at least I have not found it).
I have screenshots that may explain the situation better but no public place to host them.
I usually use imgur and then insert/edit image.

You can also just link the item and character.
I have noticed the same thing.
