I'm able to add every Wizard Ritual Spell when using the Magic Initiate Feat
Your not using the “Magic Initiate” feat, that’s the “Ritual Caster” feat.
Yes, that feat is designed to allow players to add more spells to their PC’s ritual books. That is by design.

Yup. Get 2 to start, and then more if you find scrolls for them. So if they couldn’t keep adding them it would be a problem.
But if you intended to take Magic Initiate, then that will limit you to the two Cantrips and one 1st-level Spell as it is supposed to.
