I've been interested in playing a cleric for a while, and Omin Dran has inspired me to go into the war domain. But what race should I go with flavor-wise? What were some combinations you had fun roleplaying?

I just rolled up a cleric (twilight) for Wild beyond the Witchlight campaign and used custom legacy Satyr (fey!) for the magic resistance (the speed, Performance and Persuasion skills, and proficiency with one musical instrument are good too).
Dwarves would work for war cleric because they can ignore the penalty for heavy armor, so you can put more points in WIS and CON and less in STR and DEX without sacrificing your AC or speed. If *not going custom*, go hill dwarf (+2 CON, +1 WIS) and +1HP per level. If you can use custom creation, reverse those bonuses on hill dwarf or go custom Mountain dwarf for +2 WIS and +2 CON (and retrain the martial weapon skills to tools and musical instruments).
I like the dwarves having no penalty for heavy armor, I think the Hill Dwarf would be an efficient choice. And sorry if this question has an obvious answer but why the emphasis on Musical Instrument proficiency?

That character is for Wild beyond the witchlight which has a fey theme and music is helpful with fey. And there is a carnival. and it's always helpful for roleplay. If you're asking why satyrs come with it...they are known to play panpipes in lore.
Yeah, if you don't need the extra +1 stat and to retrain the weapon proficiencies as tools or instruments.
Yeah I was thinking Shadar-kai but I was worried that everyone at the table would assume I was an edgelord lol. It seems like a neat choice though. And I never even thought or tortle, thanks for the suggestion!

You cant go wrong with half elves and they work well for that balance that I like. Sadly i had to stop playing him but plan to bring him back someday and change the mistakes I made

Some of my favorite race for War Domain include the Mountain Dwarf Cleric of Clanggedin Silverbeard, Goliath Cleric of Grolantor and the Half-Orc Cleric of Gruumsh.

Currently playing a Duergar War Cleric. I recommend. He has a lovely Maul, and smashes things.

Simplicity doesn't always mean bland, half elves are easy roleplay, and Omin Dran is a half elf as well. A solid suggestion, thank you!

I also like for War Domain a Wood Elf Cleric of Corellon Larethian or Solonor Thelandira with longbow.
Centuar War Cleric could be fun.
Dragonborn or minotaur, cause, I dunno, both tend to have war-like cultures? It just kinda fits, in my opinion.

There are probably plenty more, but off the top of my head, if you're thinking more about flavor than optimization, any of those could be fun.
