Is there a way to change the Pro-Bonus that is visible on the stat block after creating a homebrew NPC “Monster” such as when editing a Champion?

I am pretty sure proficiency bonus is set / calculated based on what you put in for the Challenge Rating.

If you want it higher or lower, raise or lower the CR.
