That means that you, or someone in your campaign, has made a homebrew race using human as a template and has not changed the name. It is homebrew and you can probably ignore it.
Anything labeled "copy of" is homebrew. Either you experimented with homebrewing a race that copied human as a template, or you were building a character in a campaign where someone else did.
Note: not all homebrew includes "copy of" in the name, but when someone chooses to start the homebrew creation process by copying an existing thing (race, monster, spell, etc.) and using that as a template, the name is initially set to "copy of X" where X is the existing thing. Usually the homebrew creator changes the name as part of the editing process, but not always.
I was on character builder and a noticed that one of the races was called copy of human. I have not clicked it, but I am curious what this is.

If you don't want to use any homebrew on your character, you can turn the "homebrew" toggle on the home page of the builder to off (grey/left)
