My issue seems to occur whenever I attempt to modify and delete the racial options in the Metallic Dragonborn race from Fizban's. Since there's five options for ancestry, I wanted to use the racial trait mapping template (for convenience's sake) to make a new dragonborn variant subrace with three options. I tried two approaches, both ending up with the same issues, so I ended up deleting both and duplicating the Metallic Dragonborn subrace again and leaving all five options be for the time being.
Attempt 1
Duplicated Metallic Dragonborn subrace from "Create Variant Race from Template"
Deleted "Brass" and "Copper" from Metallic Dragon Ancestry, keeping "Gold", "Silver", and "Bronze" but renaming them/modifying them
Deleted the same for "Breath Weapons" and "Draconic Resistance", making sure to get rid of the "Brass" and "Copper" options and renaming the other three
Tested on a character sheet, and this happened: the deleted options and racial trait mapping from Brass and Copper were now present on my sheet no matter what option I chose in the builder
Since I'd deleted all of the Brass and Copper options, going back into the homebrewer didn't help because I couldn't further delete their code or behind-the-scenes mapping since I'd deleted the options already

Thought maybe the issue was that I tried deleting the Ancestry first and it messed up the smaller mapped options, so I deleted "Brass" and "Copper" options for "Draconic Resistance" first
Then deleted the same for "Breath Weapons" and finally "Metallic Dragon Ancestry"
Repeated test on a character sheet - same result, regardless of which of my three modified options I'd chose, I would still see the resistances and breath weapons of the Brass and Copper dragonborn visible despite having deleted them
Attempt 3 (current workaround)
I've decided not to touch/delete anything and ask for assistance
Made the template again but kept Brass and Copper intact
Renamed Gold, Silver, and Bronze to my liking (Iron, Mercury, and Steel)
Now Brass and Copper are still visible, so I'm wondering if there's any way I can delete those two options (and the other stuff tied to them throughout the base race) without messing up how they display on the sheet?
I figure the one guaranteed way is creating it from scratch, but that would take a long time vs. trying to cut corners by copying a race that already has 60% of the mapping I wanted to do.
I’m not skilled enough with the homebrew tools to tell you which of your approaches should work, or what other approach you should take in terms of specifics, but given what you describe, I do have a few questions that might (or might not) prove helpful.
1) After finishing your editing, did you save using the topmost Save button (in the area titled something like Basic Information)?
2) Did you wait at least 20 minutes before testing the homebrew on a character sheet? (Server side caching can cause delays)
3) Did you change the race to something else and then change it back to your homebrew to make sure that the character sheet was pulling the updated homebrew?
