So I am making a test character to plan out the future of my actual character but I'm running into an issue where the majority of the spells I have added just break the sheet... please help if anyone can.
If you are referring to showing the spells as being up-castable, that is something that you can toggle in your character sheet. Though I would recommend leaving it on, especially if you are going to be playing a Warlock since they can only have one level of spell slot at a time based on their level in the class.

Your sheet isn't broken. Warlocks have Pact Magic, which gives you just a few spell slots all of the highest level (capped at 5th), which is why the majority of your spells are at 5th level. Invocations can give you access to at-will and once-per-long-rest spells. You have once-per-LR Darkness & Hellish Rebuke from Infernal Legacy (as a Tiefling). That accounts for everything I see here.
