If a Lv.1 character takes the Strixhaven - Lorehold Student background (and thus the feat), there's no way to choose two cantrips from the allowed Light, Sacred Flame, and Thaumaturgy list.
At this time backgrounds can't add feats, so you'll need to add the Strixhaven Initiate feat separately, using Manage Feats from the Features and Traits section of your character sheet. Select the version of the feat for Lorehold, with the spellcasting ability you intend to use. The feat is where you select the 2 cantrips and 1st-level spell.

Can you link to the character that you're unable to add the strixhaven initiate feat to? I'm able to follow the steps provided with my non-spellcaster fighter
Make a level 1 fighter
Select Lorehold Student during character creation
From the character sheet, go to Features & Traits > Feats > Manage Feats
Select Strixhaven Initiate (Lorehold - ANY ABILITY VERSION)
Select my 3 spells from the bottom of the feat description in the Manage Feats sidebar

The first two dropdowns are for the cantrips, the third dropdown is for the 1st-level spell. You only get one 1st-level spell from the feat, not three.
I'm so sorry, I'm not sure to which drop downs you are referring. I added the feat on my character sheet - there are no drop downs there, and it is not visible to me at all in the builder.

That solution doesn't help for races without spellcasting ability e.g. ranger
Ranger is a class, not a race.
On the character sheet, just go to the feats section and directly add the relevant Feats.
