What exactly do you mean by “overwrite speed feature?” Do you mean on the character sheet? If so please post the URL for your character sheet so someone can look into it for you.
After you type a number into the Speed (ft) box for the speed you want to customize, you'll need to click somewhere else in the sidebar to make the change "stick".
If you want to display a different speed than Walking on the main sheet field, that's what Set Movement Display is for.
This appears to be due to the combination of the modifier Set - Innate Speed (Flying) and the inclusion of Speed Flying under the race’s Basic Information, which is also used by the MotM aarakocra and fairy, as opposed to the Legacy aarakocra. I‘ll pass this information along to the team, thanks!

This is unfortunately still an issue. The server I am on limits flight speed based on Level. So, my Aarakocra's 30ft of flight is halved at 15ft. It isn't THAT big of a deal, but why put the ability to customize if it does not display?
The correct speed does not display with swimming speed, as well. It appears to be attached to walking speed, so if I customize my swimming speed as a Fathomless Warlock to 40 and leave my walking speed as 30, the swimming speed on the character sheet remains at 30 even after changing it to display the swimming speed. However, if I change the walking speed, the swimming speed adjusts to the same number when displayed.

D&D Beyond uses imperial measurements exclusively - if you're seeing metric measurements, it's due to some extension you're using. Unfortunately you'll have to track that down yourself as there's no way for us to know exactly what it is. The character sheet shows feet for me.
Thank you. That was the issue. It was an extension that was download to connect with Roll20. Deleted it and loaded the proper extension and it works now.
Greatly appreciate you taking the time to address my dilemma.
