I am trying to create a cleric and the only domain available to me is life. I had a similar issue with a warlock that would only allow pact of the fiend.
Those are the only free subclasses (each class has 1, not counting playtest/critical role). To access more subclasses, you either need to buy the books or individual subclasses from the market place or play in a campaign with someone who has bought those options and content sharing enabled.
You can also purchase subclasses individually from the marketplace - any such purchases are fully discounted off the cost of the full source book if you decide to upgrade in the future.
What if you have the master tier and have access to all of these? I own them or have them shared with me. I can’t get anything other than life. I don’t want life. Help please.

Check your entitlements (see link in my signature).
Any material that is shared with you can only be accessed by characters in the campaigns where said material is being shared.
Confirm also in your list of purchases (same page as where you check entitlements) that you bought the full version of the book that lets you use things in the character builder (usually $29.99 for a not-on-sale book) versus the cheaper ($19.99) compendium read-only version.

These subclasses are not part of the D&D 5th edition SRD and will need to be unlocked from the marketplace before you can use them on D&D Beyond.
D&D Beyond can be used for free and contains information from the following "free to use" sources published by Wizards of the Coast: D&D 5th edition SRD, D&D 5th edition Basic Rules, and Elemental Evil Companion.
Content from other sources, such as the Player's Handbook, Dungeon Master's Guide, or Monster Manual, will need to be purchased from the Marketplace or accessed via another user sharing content with you via their Master Tier Subscription.
