Can you edit the weapon dice? It doesn't seem that I can do this.
My monk has just picked up an item which lets his unarmed damage jump up to the next level of die. So instead of 1d6 with his kicks he can do 1d8. I don't see any way to edit the attack to change the base dice?
Unfortunately there is currently no way to change the base dice type on an item. I believe that's part of the long-term Homebrew overhaul plans, but that's very far off.
Yeah I did that. So the DM has give me not only a jump of die but an additional +1 to hit and damage. So I can create a custom weapon which does 1d8+1 base damage but I can't get it to have +1 to hit???

Correct, the ability to add To Hit Overrride, To Hit Bonus, and Damage Bonus (All of which are available to tweak on non-custom weapons) are currently missing from custom items and actions. I'd make a post in D&D Beyond Feedback requesting it.
You might be better off creating a Homebrew weapon for this.

one work around is to create. custom attack on your character sheet.

You might be better off creating a Homebrew weapon for this.
You can make it as an action attached to a feat. You can then load the feat directly onto the character sheet.
