Even though "All firearms require ammunition" is in the description of Exandria firearms, the actual property doesn't seem to be on any of the guns. Making it a little tough to Homebrew around for "weapons that have the Ammunition property".
(Edit: Also, for the purposes of searching, the Exandra firearms don't seem to have the Combat and Damage tags)
Because Matt Mercer designed it that way. Exandria firearms use a different rule for ammunition and therefore were intentionally written without the standard D&D Ammunition property.
I get that Mercer designed it with specific ammunition rules for crafting bullets (making them rare). It's a bit odd though, considering Ammunition and Ammunition (Firearms) don't seem to contradict his ruling.
Also, Explosive and Misfire are blank for me. I'm assuming because I don't own EGtW, despite being able to see all its weapons.
If you're referring to the Gunslinger, that's not a EGTW options. Explosive and Misfire are blank for me too, it's not got anything to do with EGTW, the Gunslinger is free to access here: https://www.dndbeyond.com/classes/fighter#Gunslinger
Secondly, Matt wouldn't be able to use the Ammunition (Firearms) property as that's a rule from the Dungeon Master's Guide, which is non-srd. He made his own firearm rules using what was present in the SRD which has lead to some discrepancies.
Ah the DMG non-srd reason makes total sense. However, Gunslinger is a CritRole subclass (indicated by the icon), which maybe is what is confusing me here ... If it's CR content (but not EGTW), then it's ... what? an addon? SRD?
I suppose it's just my frustration that they added new Properties like Reload, Misfire and Exploding, but not something like "Ammunition (Exandria)", if they can't use Ammunition (Firearms) from the DMG.
The gunslinger is effectively glorified homebrew. DDB added it as part of their sponsorship of Critical Role, along with the Blood Hunter.
DDB added the properties Matt gave his weapons, which importantly didn't include ammunition. There's an ammunition rule for his firearms, but it's not a property, that's how Matt designed them and DDB can't change that.

Gunslinger subclass and Bloodhunter class were both added to DDB because they sponsor Critical Role and Crit Role needed them to play. So if DDB wanted Crit Role (and who wouldn’t) they had to add them. They are basically just super famous homebrews by a super famous DM.
