The 'Deflect Missiles' functionality is not set up correctly; in the text it correctly displays as 1d10+DEX+Mnk Lvl but the display in the 'Reaction' section shows it as 1d6+DEX...
The attack in the Reaction part of the Actions section is the damage it does if you spend a Ki point to throw it back (Martial Arts Die + Dex). The 1d10+Dex+Monk Level is the amount of damage you can avoid.

You roll the D10 to reduce the damage then add the other numbers. There is no other roll to reduce the damage.
"If you reduce the damage to 0, you can catch the missile if it is small enough for you to hold in one hand and you have at least one hand free. If you catch a missile in this way, you can spend 1 ki point to make a ranged attack with the weapon or piece of ammunition you just caught, as part of the same reaction. You make this attack with proficiency, regardless of your weapon proficiencies, and the missile counts as a monk weapon for the attack, which has a normal range of 20 feet and a long range of 60 feet." So its a D20 like anything other attack that you add your dex and prof to hit, that uses your martial arts die plus dex as damage. So TO HIT: d20+dex+Prof DAMAGE: Martial Arts Die + Dex
Yes, I know what to roll, but there's no way to add that roll action. If the point is to automate the process, that piece is missing. The damage roll only comes into play after the deflect roll, so it would arguably make more sense to have the deflect action available instead, since it can trigger every turn, as opposed to the attack portion, which only triggers a portion of the time that the main deflect is used.
Additionally, since there's no way to manually add character characteristics to the rolls attached to custom actions or items, it's not even possible to make a custom deflect action that uses the correct bonuses.
Not gonna lie; a 'Roll to Catch' option wouldn't be a bad idea to add to the Reaction tab under Actions on the Character Sheet. I imagine it would be WAYYYY down on the priority list but it's not like it's a niche feature belonging to one subclass - every Monk uses this.

I mean, I am playing a monk in an Avernus campaign currently (punching my way through hell), and I feel you on this one after having vehicle arbalests fired at my character and realising there wasn't a pre-configured way to roll for the reaction to reduce the damage.
I just had a look at the formula and yeah, this can be done.
I've dropped a ticket on my team's backlog to add a preconfigured rollable dice to the Deflect Missiles reaction that calculates correctly.

I've gone ahead and added this to the official monk class and everything seems to be functioning correctly (except my ability to roll a decent number on the dice).
If you don't see this available on an existing character (it should just work) you may need to click on the feature and set it to show as an attack.
