I'm creating a new fighter, single class, level 3, and there are subclasses like arcane archer, but not Eldritch knight or the other basic rules and phb subclasses.

There is only 1 free Basic Rules fighter subclass, the Champion. The other PHB subclasses must be unlocked through purchase.
