So I just got a few new rulebooks and an amazon gift card so I was wondering what rulebook I should buy next, I already have the dungeon master guide, Xanathar's guide, Tasha's cauldron, players handbook, Eberron rising from the last war, Volos guide, and the monster manual.
If you are interested in additional monsters and info on them, I’d recommend Mordenkainen’s Tome of Foes.
If you are interested in additional campaign settings, I’d recommend the Wildmount or Theros books, or waiting until the new Ravenloft book comes out later this year
You're basically looking at another campaign setting, an adventure book, or Mordenkainen's Tome of Foes. I like Mordenkainen's and it's useful regardless of what setting you use or even what adventure you want to run if you like tinkering with the encounters a bit, but it's up to you what will give you the most value.

Im mostly looking for rules and races/ sub races/ subclasses because I like giving my players lots of options. But my goal is to eventually get them all.
Mordenkainen's Tome of Foes is probably the last of the truly useful ones that you don’t have. Wildmount and Theros are the next most useful after that IMO.

You’ve covered most of the major options available for these with what you have. One that hasn’t been mentioned is the Ravnica book which does contain some race options, and I think there are a few subclass options in the wildmount book. Mordenkainens is mostly monsters, with one race and a number of elf and tiefling sub races, but it’s a great book for extraplanar creature options

Or you might want to preorder the upcoming Ravenloft book. It is sure to have at least two of the subclasses and supposedly a couple of lineages.
