I'm looking for some inspiration for werebeasts to write up ideas for - what would people like to see?
I'm considering a Were-peacock, and were-raptor. What other cool were-beasts do you think would make for some good options, on top of the bear-boar-rat-wolf options we already have?
Werebeas? Hmm....I'm not sure what to make of that... ;)
On a more serious note, this may or may not apply to what you're looking for, but what about the reverse? A creature that's primarily an animal that get transforms into a person? Could be an interesting twist. Not sure how easy it would be to pull off though.

Wolfweres were a thing in 2nd Edition.

Find your own truth, choose your enemies carefully, and never deal with a dragon.
"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.
<sings> "It's all been done... it's all been done..... it's all been done.... before......"
Not the way I'm doing it! At least, I think...
I had thought about were-dinosaurs before, were-spiders is a new one to me though, I might have to rewatch the old spiderman cartoons where he grows extra arms and such!
Human. Male. Possibly. Don't be a divider. My characters' backgrounds are written like instruction manuals rather than stories. My opinion and preferences don't mean you're wrong. I am 99.7603% convinced that the digital dice are messing with me. I roll high when nobody's looking and low when anyone else can see.🎲 “It's a bit early to be thinking about an epitaph. No?” will be my epitaph.

One time as a kid I saw this really cheesy Sci-Fy Channel original movie called Earth Vs The Spider or something. It had Dan Acroyd in it (not as the lead) and it was basically what if instead of spiderman you got grotesque spider-human hybrid, and in retrospect it was basically a werewolf story.
Idk why this movie stands out in my head when I can barely even remember if I have a favorite band for god's sake, but if you're a connoisseur of bad B monster movies, I'd recommend it.
*Edit*
After some googling, it seems I saw the 2001 remake of a 1958 monster movie.

I was going to say 'none' - because were-things have been done to death. But were-spiders and some sort of snake-shapechanger actually stuck with me.
But ... I like changelings, doppelgangers, mimics and so on much more than I like were-creatures. If I were to make a spider-shapeshifter, I'd have the spider crawl out of the mouth of the human, leaving behind an empty husk. It wouldn't be able to reuse it, but it could spin another around itself like a cocoon.
Similar for a snake-shapeshifter - molting into various forms, then shedding them like dirty clothes.

Blanket disclaimer: I only ever state opinion. But I can sound terribly dogmatic - so if you feel I'm trying to tell you what to think, I'm really not, I swear. I'm telling you what I think, that's all.
I have one of my pcs get infected with lycanthropy by a were-chicken. I must have an issue because I regularly torture my players with various annoying chickens.

This exists in Tome of Beasts 2. I’ve played it and it’s fun! It’s CR 5.
Only spilt the party if you see something shiny.

I know it was a typo- but werebees sound kind of amazing. Or perhaps werecats and werebirds.

Unrelated but I'm reading about this movie and get a load of this weirdly star-studded cast: https://en.m.wikipedia.org/wiki/Earth_vs._the_Spider_(2001_film)
Was not expecting "Pedro Pascal as "goth guy"" haha 😆 🤣
Were bees seems like it would be scary. But I think the population would be kept in check. They sting sing to infect someone but with self-sacrifice.
Unless they were secretly werewasps.
