When I DM, I typically allow Unearthed Arcana stuff as long as an official form hasn't come out. Examples include the Close-Quarters Fighter and Mariner fighting styles.
There are two (just now bumped up to three) occasions where I'll still let a player use UA over official content. That's the UA Warforged which came with the three sub-races, the Ravnica Viashino race, and now the first UA's Dragonmark feat that gives you innate spells.
I still prefer the UA Versions of every subclass that came out in Tasha’s Cauldron and will allow them at my table. I also prefer the UA version of the Deft Explorer optional rule for Rangers. And there are several UA spells that never got published that I allow including the Artificer exclusive Arcane Weapon and a Bard spell called Unearthly Chorus, as well as several feats.

Yeah. I've always thought the UAs that came out were honestly very good but then you get a very vocal "HOLY SHIT THIS IS OP" type crowd. Sure, UA as a methodology is "Start ambitious, water down as needed", but often I feel it gets the hit stick too hard. Ranger was a great example of that. Ranger has just been been woefully underpowered and the UA did a LOT to make them very viable. Then it got watered down and people for the most part still don't play rangers.
Or like how Circle of Wildfire for Druids, the UA took away Fireball and gave them Revivify which then all Druids got access to via Tashas optional spells.

There are also some spells in that really old Modern Magic UA that look interesting to me, like Commune with City and Synchronicity.
