The Players Handbook and Mordenkainens' Monsters of the Universe contain most of the options for subclass and race, respectively. The other sourcebooks also contain various subclasses. You will need to purchase them to gain access, but if you scroll down on each books purchase page, you can also purchase individual classes, races, subclasses, etc for much lower prices than the entire book (plus it credits what you have spent to the book as a whole)
You have to buy it to get access to the options in the player’s handbook, yes. But that is far from all the character options. If you’re looking to save some cash, you might be better off just buying the specific species and subclass you are interested in playing. The cost of them will then be deducted from the book prices, should you later decide to get the whole book they’re in.

If I buy the physical copy of say Monsters of the Multiverse off of DND Beyond, do I get all the races for character building, or is it just with he digital copy?

Without the PHB, you also only get access to a small amount of spells for any spellcaster characters you might create.
Find your own truth, choose your enemies carefully, and never deal with a dragon.
"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.

Yes you need to purchase it to have full access to things in the Players handbook
You do have access to the basic rules and lost mines of Phandelver with purchasing.
There are some 105 species right now (not including Dragonlance)
To get the most bang for your buck 67 of them are in
Players handbook, Mordenkanians, and Ebberon
