The first books I'd look into are:
1. The Monster Manual.
2. Mordenkainen Presents: Monsters of the Multiverse.
It really depends on what you want though. If you have those and want to go deep on dragons for example, then you want Fizban's Treasury of Dragons. What you want and what you have really does matter for our recommendations.

It's on D&D Beyond, has some fantastic monsters, and each stat block has a simple note like "skirmisher" or "Leader" that tells you what sort of role they play and allows you to really effectively build combat units

Seconding this suggestion. The minion rules in Flee Mortals! Are also pretty good and I would say are a godsend for mass combats. (Slight aside, both monster role tags and minions are great elements of 4e that should have made it into 5e proper, not just third party content).
Tome of Beasts is also a great third party supplement on D&D Beyond with a whole lot of monsters in it. They tend to be a little more powerful for their CR than monsters in official content (which, frankly, is a good thing) and there is a whole lot of different content across the level and usage spectrum, making it a great instant expansion of your monster repertoire.

We have been playing DnD on beyond for 2 years already,
I wanted to ask what books are recommended to have a lot of NPC(mobs, monsters etc), so we can expand the variety of mobs during encounters

They said they've been playing D&D for 2 years (so they're recent) on beyond meaning they're playing D&D 5th edition and using D&D Beyond to do so.
Recommending a module from 1986 for D&D 1st edition is not a helpful suggestion given
