Title is basically it. I don't see any threads asking for feedback on encounters made in the encounter builder and I don't want to annoy people by asking for some feedback.
Bizarre as it may seem it could be wise in future to check the forum specifically named D&D Beyond Feedback, especially since right there under it is a link to the subforum Encounter Builder Feedback, which seems to be what you're looking for. In fact you even see this before seeing General Discussion since the Feedback forum is listed first. So, you definitely saw the forum (literally impossible to not have done so) and for some reason decided the Feedback forum was not the place to look for forums about feedback. I am highlighting this to provide the advice: when on forums, look at all options carefully and then go to the general discussion/miscellaneous forum when no other choice is fitting. This way you can almost always find what you're seeking much faster and it keeps the forums organised.
So, that said, the forum you want is the Encounter Builder Feedback forum. Get clicky with the blue text for a plethora if the encounter builder feedback you're seeking. There's feedback on encounters made, those who played such encounters, those who made them, comments on the use of the builder, problems or limitations, the works. It should have everything you were looking for and is the best place to ask for something more specific if it doesn't.
In a less-snarky way, I might point out that - at least from what I can see of threads in there - the "encounter builder feedback" forum is a place for people to give D&D Beyond developers feedback on the functioning and/or bugginess of the encounter builder, and *not* actually for people to ask for feedback on encounters they've built. My suggestion would actually be the DMs Only forum, but here also seems fairly appropriate.
D&D Beyond Feedback is for feedback about the encounter builder for the D&D Beyond devs to take feedback on the utility. It isn't for feedback on user-created content quality. I actually did look for a forum specifically for that, but there is not one that I have found. All the threads there are about technical aspects of the tool for devs. I don't know what you're talking about, but that doesn't seem right at all. It's for providing feedback, not receiving feedback

but there's nothing like that I see there. Just technical/tool functionality stuff. I scanned all 7 pages, nothing about getting other user's opinions on their encounters.
So, bizarre as it may seem, it could be wise in future to actually read what's in the forum before you expound upon its contents.

Thanks! I think I'll try over at the DMs Only forum and see what I can find there.

Sure why not
There is a sub-forum for this.
