Lets take Volo's Guide to Monster which I own already physically.
Say I only buy the sub-content instead of the Book Pack? What am I not getting? Like if I bought all the races, subraces, and monsters. It works out a little cheaper than the $30 Pack, but am I making a big mistake?
Or like-wise what if I buy just the "Compendium Content" at the bottom, what exactly am I getting access to and what am I not getting? Is that equivalent to buying the sub-content I listed above? Or is it more like buying everything that ISN'T what I listed above?
Just trying to see how to get the best bang for my buck.

The compendium content is the content of the chapters in the compendium section at the top of the page, but doesn't give access to the content in the character builder.
The races, subraces, monsters, etc. bundles apply to the character builder only.

Ok so, since I already own Volo's Guide physically. It might be better for me just to buy the Sub-races for the builder, if I don't mind just flipping through pages for the other stuff?
You say for the character builder only, but say I buy the Monsters sub-content. I'd get access to the monsters in the Monsters Listing right?

Yes, my apologies. From what I can tell, the individual items, spells, and monster listings will also be unlocked by their respective bundles. I double checked by looking at the spells listings for the content I purchased and they are unlocked for me.
The compendium content is basically the digital versions of the books with the chapters, art, etc.

Yes, you will get a credit for what you purchased toward buying the complete book.
