Currently, I'm considering creating a spell focus for Azhumi or others and using the cart wall as a drum to cast a ritual spell. This would involve summoning Unseen Servant and using Minor Illusion as a Help Action to let it steal keys or scout the caravan. Do I need to roll for this plan?
That's doable, and yes to the roll (for stealth), but only if you choose to do so stealthily and without consent of the others. If you plan not to collaborate and alert the guards, just go ahead without rolling. If you want to consult your fellow inmates (and players), then perhaps wait before potentially thrusting everyone into battle (especially considering that not everyone has been active).
@DM Azhumi usually only acts after planning, and they will definitely consult with others. Not because they trust them, but simply because they don't want to be disturbed.
Aeliaz the Aarokokra opens his eyes and finds himself in the cart, surrounded by many strange individuals. He tries to stretch his wings but he is tied up and can’t move. Instinctively he introduces himself to the others by saying, “Greetings, I am Aeliaz the ranger, who might you all be?” Before he woke, Aeliaz had been roaming the woods in search of some wanted thieves. He is tall for his race and he has white plumage and yellow eyes.
The halfling's smile disappears. Quietly, he beckons the others.
I have an idea, but I still insist we bring the others. I would prefer we wait for them to awaken, but as Boomi has mentioned, time is short. Now, child, you spoke of creation. I would assume that makes you a performer of sorts. If so, and you have as colorful a vocabulary as you've hitherto used, then I need you to anger them. Infuriate the guards and draw them to the right side of the wagon. Try to locate the one with the keys, just in case. Meanwhile...
He turns to the dwarf.
Boomi. From your handshake earlier, I would assume you've quite the arm behind that grip. I'm no slouch myself, even in my ripe old age. If we charge the wall of the cart together when the guards are there, we can topple the cart. From there, we work together to pry the floor boards and escape. If that fails and the boards are immovable...
His blind gaze returns to the child
...Use your means to grab the keys. Then, we grab our unconscious compatriots, the guards' weapons and flee.
If you can do so discreetly before we begin,see if you can conjure a small stone shard for our woodsman to free himself. Then...
He turns back to the ranger.
...You can help us overturn the wagon. And while the dwarf and I pry open the bottom, you can relieve the pinned guards of their weapons, as well as anything else that may be useful.
I won't know if everyone's on board on how to escape, but if and when we find ourselves free, we'll probably have to flee. The aarokokra will have some limited flight and I've no doubt the half elf would have an easier time outrunning her pursuers, but that would leave a blind old halfling, a dwarf and a still unconscious gnome to take up the rear. That's why I'd like to ask Aeliaz to carry the smaller party members ahead, one at a time, starting with our sleeping compatriot. Then, me. If Boomi allows it, he could be third. It wouldn't be far, just enough to take a breath, get our bearings and plan our next move.
(( That would be fine, but carrying someone would also limit what other things you could do with your arms occupied.. as far as inacting the plan, yes, I imagine you'd need a number of rolls... such as stealth for the magic of the bobybard and strength for hitting the cart to try and topple it... ))

Azhumi considers the Halfling's plan. "Well, it's not bad. But food and drink are still a problem. I made adjustments for your plan..." The bard uses their index and middle fingers to tap the wooden floor like an improvised drum. They start slow and then accelerate the rhythm. An illusion of pictures and script appears on the floor, explaining their plan to others. (Casting Minor Illusion)
First, use magic to summon an Unseen Servant under the floor.
Second, wait for their captors to have a meal, then order the servant to create mayhem on the right side of the cart.
Third, figure out who the key holder is, casting Phantasmal Force on them, screaming about an invisible monster attacking the caravan to create more confusion.
Fourth, break the floor with Dwarven strength, bardic inspiration, and help action. (By the way, if we wait until the caravan has lunch or dinner, can't we slip away from the hole on the floor without knocking over the cart?)
Fifth, let the servant steal the keys if we fail to open a hole on the floor, grab as much food and drink as possible, and RUN!!!
"And hey, why do I have to make a little pointy stone piece when I can make a battle axe for the Dwarf... Wait a second. Why don't I make two at once?"

Can Azhumi use Performance of Creation to make a flute with a sharp iron axe head on it, like a Native American's pipe tomahawk?

There doesn't seem to be any flaws. It's well crafted, but you notice the solid wood top vs the nailed planks to make up the cart bottom.

Depends...is the easiest way to answer that. You'll have to be more specific about what you're trying to do in what instance.
