are there rules for amount of downtime offered per hours of gameplay? does proficiency at a type of armor add the proficiency modifier to your AC? does proficiency modifier add to your damage?
Downtime days are per module ran... seems like I get 10 per module usually.
Yes, and each module has an expected playtime - usually 2 or 4 hours - this expected playtime is what DT is based off. For hardcovers you go by how long you actually played.

I don't know myself - if nobody here helps, I suggest you check the AL rules.
does proficiency at a type of armor add the proficiency modifier to your AC?
No, it doesn't. This is a standard D&D rule.

Downtime is awarded based on the module or based on set number of days per hour played. Should be in the DMG AL Guide.
