Using a feat can you grant expertise, or change the damage die/type of unarmed strike?

No. However you can add whole numbers to the attack and damage rolls of your unarmed strikes.

Modifier: Bonus->Subtype: Unarmed Attacks->Fixed Value: X

Modifier: Damage->Subtype: Unarmed Attacks->Fixed Value: Y
