I'm trying to make a homebrew subclass that gives proficiencies with finesse weapons and unarmed attacks at level one, but whenever I go into the "add a modifier" section and click "proficiency" it doesn't give me the option to choose that specific weapon property or unarmed attacks. Is there something I'm doing wrong, or is it just not an option?
Every character is automatically proficient with unarmed strikes. As for the finesse weapons, you would have to grant proficiency with Shortswords, Scimitars, Rapiers, and Whips individually, everyone is already proficient with Daggers, and those are all the finesse weapons I believe.

There is no official option that gives such a proficiency, so the modifier doesn't exist in the system
