Not really, no. The only way to do that would be to recreate the breath weapon trait as a base species trait (instead of attached to the Options) and leave the damage type blank. The damage would scale, but the damage type won’t be displayed.

The problem with that is you have to assign the spell to a spell list (like Wizard, etc.), which would make it available for all characters with that spell list. The workaround there is to create a holding subclass just to assign the spell to it. For my holding subclass I created a Barbarian subclass with Spellcasting just to make sure those spells stayed separate. You could theoretically even delete the subclass when done and the spell would then be assigned to nothing, which would only matter if you ever tried to edit it.
So I'm trying to add the One D&D Dragonborn, Breath Weapon as an action specifically, which does "1d10 + your character level in damage".
Is there a possibility to configure this, apart from adding 20 Level overrides each increasing the damage by 1?
