So, I've been reading that subclasses for fighter and rogue adding spellcasting are limited to the Eldritch Knight and Arcane Trickster progression (which... Sucks, but). I have been attempting to figure out a few things, and bought Eldritch Knight for use with homebrew. As it stands, I have a few questions that I can't seem to find explicit answers to, so here goes.
Can I change the spell list of Eldritch Knight to Sorcerer *instead* of Wizard, not just in addition to? I know I can change the stat to CHA.
Does D&D Beyond enforce the EK's built in Abjuration/Evocation only rule? If so, can I remove this?
Maybe this would be better addressed on the Homebrew and House Rule forum. I am not super familiar with the homebrewing tools but it should be possible to use Eldritch Knight or Arcane Trickster as a template and edit from there. However I know for a fact that DnDBeyond does not enforce the spell school restrictions.

You can. You will select spell list in the sub class's "basic information" section after the description. Using EK as a template you can see how they set it up.
EK has a blank selection for it. There is no selected spell list. As well, the '?' suggests that this is a spell list "in addition to".
I found the system hard to use but I just tested it out using Arcane Trickster as an example and I was able to get it to work.
In the Basic Information section I just set Spell Casting Ability field to Wisdom and then chose the Druid spell list in the Additional Spell List field. I assumed this would add the Druid's spell list to the Wizard spell list already used by the Arcane Trickster but it actually replaced it.

If the subclass is for a spellcasting class, it is an additional list (like divine soul sorcerer with cleric), but if the class does not have a list it becomes the only list.
