Our DMs in a Westmarches-style server have implemented the ability to level past 20 recently, after adding Epic Boons and wishing to let characters continue to progress in levels that they have already multi-classed into, or to add a story-supported multiclass onto a single-classed character at level 20. I know "Epic Levels" have been a thing in other versions prior to 5e, as well as being a homebrew option that I have heard of at several tables. Haven't messed with much, but outside of having two separate character sheets to track each class level (i.e. my 20th level character is currently 8th level Bear Totem Barbarian and 12th level Rune Knight Fighter) and combining HP to be tracked on Roll 20, or only tracking using one of the sheets for the total, I haven't been able to figure out how to do this on a single sheet.
I know what I am asking might not be possible currently, but thought I'd reach out to see if anyone might have done something similar, or knows how one might go about this. Thanks for any help you can provide!

did you ever get a answer on how to do this on dndb?
No, it will never be possible unless WotC makes it officially possible in the game.

You might be able to hack something together with a bunch of homebrew feats but it probably won't work for a lot of things.
