Monks get a higher damage die and dexterity as the modifier for unarmed attacks if they don't wield shields.
However, for a monk subclass I want to give them shield proficiency (which is easy enough) but also keep the default Monk bonus to their unarmed attacks. When I equip a shield, the unarmed attack damage is reduced. I have tried to reapply it in the subclass as a modifier, but that doesn't seem to work. Is there a way around this?

Nope. We have no current way to alter main class features.
