Hello, is there a way to create a Homebrew Draconic Ancestry for Dragonborns and have it show up in the Draconic Ancestry table to choose?
Or would the only way be to create it as a sub race?
You can create a customized Dragonborn with any ancestry you want. Go to the homebrew creator and select homebrew races, then select Dragonborn as the template and add/change whatever you like. I suggest thorough and extensive playtesting and editing prior to publication.

So for example, let’s say I wanted to create a Purple Dragonborn, with it’s own kind of breath weapon and resistance and have it show up on the Draconic Ancestry table as an option. How could I do that?
And if I can’t and have to make a Variant instead, how do I go about removing the options to select other Draconic Ancesteries from the Variant I made?
I wrote in some of the details/racial traits for the Variant but cannot find how to take away that Draconic Ancestry choice.

Not a “variant” a replacement. Just replace them with a version of Dragonborn that includes an option for a purple Dragonborn. You just want to add it, add it. You want to replace Red for purple, replace red with purple.
If you do make it as a variant, it will ask you which base race features your variant is replacing, so just replace the ones that give you a choice.
Heck, if you want, you can make a “Chrystalne” variant for the Gem dragons (old school d&d) that have their own choices (Jet, Ruby, Sapphire, Emerald, etc) with a feature that replaces Draconic Ancestry with “Gemstone Ancestry” or whatever.
Just make a regular race (non-variant) based on the Dragonborn race as a template so you can dissect it and see how it works to make your own version like a mad scientist and then delete the remains when you are done with them. My “deleted” creations outnumber my “private” and “public” creations combined by about 4:1. My private homebrew alone is 8 pages long. My deleted is loooong..... It’s like a frikin’ graveyard in there. I have dissected some things 4-5 times just to see how they work.
But when my homebrews finally work right... “It’s alive! Alive!” *insert wide-eyed, manic laughter and hand wringing*
