If your aim is to completely hide your status from the others then you don't want the Doppleganger features at all, as they'll appear on your character sheet.
What I'd do is copy Wood Elf, and add your extra ability score improvement as a modifier (Bonus -> Choose an Ability Score, put 1 into fixed value), this is assuming you're happy to have the +1 in Wisdom that a Wood Elf normally grants.
This will make you appear to be a Wood Elf to all the other players, and it's unlikely anyone should notice your extra +1 to an ability score; now the tricky part in playing this way is that of course you don't actually have any of the Wood Elf abilities, so you need to be careful not to use them, and if you choose to use a Doppelganger ability instead you need to decide whether you're trying to keep it secret, or if you're revealing your true form, at which point you'll swap to Doppelganger for the big reveal. You might find it easier to keep a private copy of your character with the Doppelganger race already set, so you've got a reference for those abilities.
You should discuss with your DM how they'd prefer for you to handle it though, as they might prefer for you to just declare your race as Doppelganger and have the other players act as if they don't know. Alternatively they might prefer you just go a regular Wood Elf and take the 1 point ability score loss until you reveal your true nature. Either of these will avoid the need to homebrew anything.

Thanks for the replies. I talked with the DM and we worked out a homebrew for a later reveal.
couldnt you just set your sheet as private and nobody could see past the initial race/class info.
