I recently created a ver 1.2 of a monster that I had published. The new version is in the moderation queue. I don't see anywhere I can remove the mod-approved 1.0 ver from the public homebrew listing.

This is intentional - once a homebrew element (item/monster/spell) has been published, it remains published and available (unless a moderator or staff removes it).
If a user adds a specific homebrew element, we need to ensure that it doesn't suddenly change on them and that others in their campaign can access that same version.
It is possible that a homebrew author updates a specific homebrew element in a way that users of that element don't like, so an older version remains more popular.
We encourage people to complete their homebrew fully, prior to submitting, though we understand this isn't always possible.
Personally, I feel that there is room for improvement in the way that users can see whether there are updates available for homebrew they are using, allowing them to decide whether to update to the newer version. I'm fairly sure this is something that will be looked at in the fullness of time.
Also to add - if you revised your original creation, once the new one is approved, it will replace the original one in the listing. Anyone that added version 1.0 will still have it (as SK said, we dont want to remove something from someone's character without them approving), but the 1,0 will cease to exist in the listings once 1.2 is approved.
If you didn't revise and created from scratch, then that requires a mod to work some magic behind the scenes. Please PM me if you have questions or concerns.
@Sorce I could see no way to update or edit the existing one (1.0). The only option available to me from the page for the 1.0 version was "CREATE NEW VERSION", this is a little confusing.
@Stormknight: Unfortunately my desire to update was based on feedback from others, which I couldn't possibly get until after it was published. :-/

The Create New Version is the option you should use - this way it allows you to change the existing (and then over writes when the new one is approved). It then starts with a version history down the bottom (which off memory the creator and mods can search through so we can track back changes). It also allows us to see if someone has an old version attached to a character, etc.
