If the digger ever breaches to the surface, Ember has a spell - Wall of Fire which might keep it from reaching the running people.

Ember works to keep the 'team' under control as they race forward along the road; trying to close the distance between the wagon and the fleeing campers.
Racing yackles, bouncing wagon, watching the road and the burrowing digger.
Animal Handling: Nat20 + 4 == 24

Making the wagon go faster doesn't seem much of a problem. There will be trouble if you go off-road.

Alexia tells the remaining person to "Run! You're about to get eaten!" Her next action is to ready a casting of eldritch blast, for when the thing surfaces.

The man glares back with one hand on his hip and the other waving about in the air "Attack?! from what!? YOU'RE the one that made my family run off!"
The ground begins to noticeably shake then in a shower of rocks and dirt, a large armored fish shape erupts from the ground!
It soars through the air for about 30 feet before impacting near Alexia and the camper.
It impacts the ground smashing things in the way and it burrows under again. DC 15 Dex save vs 8 bludgeoning damage. Success for half.

Alexia fires Eldritch Blast and Ember casts Wall of Fire
