With training in Handle Animal one person could lead the horses to the water source, otherwise carrying water would be needed, or individually riding them to the water source and back. There is relatively little cover the path the party approached from, although most wildlife seems hesitant to get anywhere near the mine entrance, which aids your purposes of seeing to the horse's safety, but adds to the unsettling nature of The Knuckle itself.
Okkar speaks at a point when everyone is assembled near the entrance to the mine. "Although a lot of us can see in the dark, might still be best to make entry during the day. It's going to be dark deeper within the mine, regardless, I didn't see any torches or magical light sources up and running last time I and my kin made entry, but we didn't get very far. Still, seems less eerie, entering a cursed mine during the day."
"Master Okkar," begins Nanoc. "I agree we should wait until tomorrow; it has been a long hard day for us, and the horses as well. However, it is mighty exposed out here on this slope. Is there an antechamber through those doors where we and the animals might get some cover?"

Yes, Nanoc can easily find enough game and fresh water in the area to subsist off of that instead of having to tap into his personal rations stock. To find enough for the entire group would entail a survival or nature check. In these surroundings at present it would be DC 10. Goodberry access also makes that less of an issue, however.
Preferring meat over the sweetness of berries, Nanoc would have hunted, given the opportunity, and today attempted to get enough to give everyone a wholesome meal tonight before entering the mine. He would have most likely used his sling while travelling and maybe set a snare or two overnight. For this sort of hunting, he would be using stones taken from the surrounding rather than his more valuable sling bullets.
Survival (or Nature, bonus is the same) check: 4

With a 5 I will say Nanoc is able to bring down a small bird, but no larger game is to be found. It’s hardly enough meat for the Barbarian, much less his allies, but perhaps better than living on Goodberries alone.
Nanoc will prepare and cook the bird using as small a fire as he can get away with. He wants to not only conserve firewood, but also minimise the chance of attracting unwanted attention. He also is probably used to eating food that is a little on the too-rare side.

"The longest wall of this roughly trapezoidal room is pierced by a trio of loopholes. Dry-rotted furnishings—a simple table surrounded by chairs, a bench, and barrels—are spaced about the room, dusty and disused. Empty racks on the west wall once held weapons or other devices, and a pair of iron levers, one raised, the other lowered, protrudes from the wall beside the room’s door. A pair of metal-shuttered loopholes pierces the door’s face allowing defenders to fire into the hall beyond."
Good enough, as long as it is deserted. Evan considers setting up some kind of noisemaker to give the party warning if something is about to emerge from the hall during the night. "Nanoc, you are the stealthy one. Do you have any skill in setting up a warning device that would let us know if something from inside the mine is on its way towards us during the night?" asks Evan.
