I'm having trouble interpreting the wording of Radiant Sun Bolt.
Is it attack + Radiant Sun Bolt as a bonus action with the option for it to be attack + Radiant Sun Bolt x 2 as a bonus action if I spend a Ki point?

Radiant Sun Bolt
Starting when you choose this tradition at 3rd level, you can hurl searing bolts of magical radiance.
You gain a new attack option that you can use with the Attack action. This special attack is a ranged spell attack with a range of 30 feet. You are proficient with it, and you add your Dexterity modifier to its attack and damage rolls. Its damage is radiant, and its damage die is a d4. This die changes as you gain monk levels, as shown in the Martial Arts column of the Monk table.
When you take the Attack action on your turn and use this special attack as part of it, you can spend 1 ki point to make the special attack twice as a bonus action.
When you gain the Extra Attack feature, this special attack can be used for any of the attacks you make as part of the Attack action.
"You gain a new attack option that you can use with the Attack action" is another way of saying that you can replace a weapon attack or unarmed strike with a radiant sun bolt when you take the Attack action. If you do so, you also have the option of spending 1 ki point to make two more sun bolts as a bonus action.
got a question on searing arc strike .. it says its burning hands which is fire damage but the dnd beyond makes it radiant ... what type of damage is it ?
By two more do you mean, fire the original Radiant Sun Bolt + the bonus action Radiant Sun Bolt. Or original Radiant Sun Bolt + a bonus action Radiant Sun Bolt + another bonus action Radiant Sun Bolt?
got a question on searing arc strike .. it says its burning hands which is fire damage but the dnd beyond makes it radiant ... what type of damage is it ?
It should definitely be fire damage, as the class description says nothing about the damage type being changed. If you're seeing something different on a character sheet, report it to the bugs forum.

I believe it's just an oversight as the features of Way of the Sun Soul all revolve around the damage type being radiant. I'd still report it.

It's actually very simple: Radiant Sun Bolt is just a ranged martial arts attack. You can spend a Ki Point to Flurry of Blows with the ranged attack. Follows the same rules.

I played a campaign as a Sun Soul monk recently and as far as me and the DM understood, when the text says that you’re using the Sun Bolts as “part of your attack”, we interpreted it as being able to use it as a ranged trade off for the bonus unarmed strike (for example: Shortsword attack + bolt attack) and could be subbed for your normal attack (so we would do bolt+bolt in one attack). As the text also says “When you gain the Extra Attack feature, this special attack can be used for any of the attacks you make as part of the Attack action“, I would perform the shortsword+bolt combo with both attacks (we were under the impression the bolt only becomes a bonus actions when you’re spending 1 ki for 2 in one attack). I can’t help but think we played it horribly wrong, but at the same time I would think the emphasis on “part of” the attack would mean I COULD use it in conjunction with attacks. A clear clarification would be appreciated. (This topic seems questioned repeatedly, so I apologize if I’m asking something already covered)

That is incorrect. Sun Bolt is just a ranged spell attack that scales with martial arts. When you take the Attack action, you can choose to replace the attack(s) with Sun Bolt. I.e., when you take the Attack action, instead of attacking with a monk weapon/unarmed strike/ranged weapon you can use Sun Bolt.
Sun Bolt does NOT qualify for the baseline bonus action unarmed strike. It is neither a monk weapon nor unarmed strike. It does not trigger a free bonus unarmed strike, or qualify to be used as the bonus action unarmed strike. If you use Sun Bolt when taking the Attack action, you can spend a Ki point to attack with Sun Bolt two additional times as a bonus action (Flurry of Blows).
If you only have one attack from the Attack action, you do not get extra attacks from Sun Bolt. You've got 3 scenarios:
You can attack once with a weapon (non-monk weapon)
You can attack once with a monk weapon or unarmed strike
You can attack once with an unarmed strike as a bonus action (free)
You can attack twice with an unarmed strike as a bonus action (1 Ki point)
You can attack once with Sun Bolt
You can attack twice with Sun Bolt as a bonus action (1 Ki point)

I'd lean to the side of you not being eligible to take the feat at all. A Sun Soul Monk never gains the ability to use the Cast a Spell action to cast Burning Hands in a vacuum, yet Four Elements Monks do get an actual spellcasting feature. I don't believe things like racial spells, spell-like abilities, or the Magic Initiate feat are intended to qualify a non-spellcaster for Spell Sniper.
If we assume that your DM allows it, none of the features from Spell Sniper would ever apply to Searing Arc Strike or Searing Sunburst; they are not ranged spell attacks, nor do they require you to make an attack roll.
Radiant Sun Bolt is a ranged spell attack, but it is not a spell. The only thing that would apply (if eligible to begin with) is the ignoring of half cover or three-quarters cover. That's it.

You can take Spell Sniper at 6th+ level. The prerequisite is "ability to cast at least one spell," not "the ability to use the Cast a Spell Action." The 6th level feature unequivocally gives you the ability "to cast the burning hands spell as a bonus action." It does not matter for the feat that you are casting that spell with Ki Points instead of Spell Slots, or that you are doing so as an a Bonus Action instead of a Cast a Spell Action.
As for what features would interact with Spell Sniper?

Well, you do also learn an attack cantrip. If you wanted a 60 foot Thorn Whip for your Monk to help them be more versatile, or a super-distant Eldritch Blast or something on an Aarakocra monk, then Spell Sniper could be a strictly superior option to Magic Initiate or Ritual Caster. It's nifty that you can qualify for Spell Sniper as a Radiant Soul without having to first multiclass into a caster or take one of those other two feats, which would be the case for other non-caster monks not belonging to a race that provides a racial spell casting.

How many radiant sun bolts do you get with casting? Is it like magic missile and you have 3 bolts doing 1d4 damage per bolt?
As many as you have attacks. Lvl 1-4 you get one, lvl 5+ you get two. You can spend a ki point for another.
