I feel like you ought to be able to take it as often as you like provided you select a different casting class to be initiated into each time you select the feat. I also wouldn't say no to multiple iterations of the same casting class. Most casting classes have a wide variety of spells, all of which have utility. I can see the vast array of cantrips becoming clunky--but that's mostly the player's problem...

Not the current version, no. HOWEVER, in the Character Origins playtest material for One D&D, that changes. There are some changes to the way spells are grouped, and the new Magic Initiate feat offers more flexibility, including the ability to take it multiple times.

The 5e version of the Magic Initiate feat can be taken only once. Period. Full stop.
The 1DD version of the Magic Initiate feat can be taken more than once as long as you select a different version of it each time, Arcane, Divine, or Primal.

Technically, no. The rules surrounding feats state that "You can take each feat only once, unless the feat's description says otherwise (PHB 165)." Since the Magic Initiate feat doesn't specify that it can be taken multiple times, you can only take it once.
However, I don't think that taking the feat a second time for a different class would cause any major game imbalance. You can allow it to be done at your table if you would like.

Taking the feat more than once, since they made a separate feat for each magical class, should not, by ReI standards, be an issue. While you may only take a feat of a certain name once, digitally, they're all their own feat. And DnD beyond hasn't been in too much of a hurry to lock the others when you pick one so.. If you can do it in the digital space of the website, do it. Might need GM permission, but even then, why bother? It's your character, play them as YOU want to play them.
