Any Character proficient with an Herbalism Kit and capable of crafting a magic item can make a Potion of Healing with an empty vial, 25 gp, and a day’s time.
If it's not clear, I was joking, and no there's no need for a vial. The herbalist kit itself should be self-stocked with vials and the 25 gp is the cost of necessary gathered materials if let say you were to go into town to purchase goods from an alchemist/herbalist/botanist type of vendor.

Nope, 25 gp/potion, so half price. It’s normally 50gp each to purchase them.
Well, ultimately it's up to your DM's sense of economy. At a high level, he'll shrug it off as, sure why not. At level 1, it could be game and immersion breaking (but at the same time, if I was the DM I'd allow it because it's a clever way of breaking the game to get through that level 1-2 hurdle).
You could ask the DM to consider 5 separate Nature checks to collect 5x25gp amounts of herbs for that week. A DC of 15 for an unexperienced novice, or DC10 for an intermediate herbalist, DC5 for a high level alchemist.
Your 2 days of gathering/farming could be worth 125 gp, potentially more if you're lurking in the untouched wildernesses of Faerun or Toril where the druids and elves commune with nature.
But you're not going to scrounge up 125 gp of herbs in two days on a potato farm. But then again, what do I know? Absolutely nothing! It depends on your DM!
If you spend a few hours a day searching in an area the materials can be found, you make a survival check and get the result gp amount of material. For example a survival result of 15 gets 15gp worth of herbs.
Allies can help, but make the check with disadvantage if they don't also have the tool proficiency.

XGtE has a section for brewing potions of healing during downtime. It takes 1 day and 25gp to make 1 basic potion.
For the most part crafting rules are pretty vague and up to DMs.
An empty potion bottle, 3/4 cup of water, and 1 packet of strawberry coolade powder........ OHHH Yeaaaaaa
