I have a question for the artificer infusion, Replicate magic item. I was wondering if once I create a magic item with that infusion can I make another magic item later on? lets say I wanted to make a bag of holding but later on a few sessions later I would want to make some sending stones or something, would my BoH dissapear? would it just not work?

Each magic item you replicate is a separate infusion choice tied to that specific item.
you specifically choose Replicate Magic Item: Bag of Holding as an infusion and if you choose to have it as one of your active infusions you can make one bag of holding with it
If you want to replicate another magic item you would need to use another infusion choice to select Replicate Magic: Sending Stones
You can have both actively infused as two of your choices up to your active limit

You can take the Replicate Magic Item infusion multiple times (up to your maximum infusions known). You can even take this infusion more than once to create the same item, but it is still one of your known infusions for each instance--two Bag of Holding requires two of your known infusions.
As for what happens to your BoH if you replace the infusion? It either completely disappears (including anything in it), or you're left with a non-magical (empty) bag. The Artificer class rules allows you to replace infusions when you gain a level, and there's no disclaimer that you cannot replace an infusion that has generated a magic item. I'm not a fan of this interaction, but it is what it is.

You don't know what fear is until you've witnessed a drunk bird divebombing you while carrying a screaming Kobold throwing fire anywhere and everywhere.

You cannot learn the same infusion twice. There is no legal way RAW to infuse two Bags of Holding at the same time.

Artificers have invented numerous magical infusions, extraordinary processes that rapidly create magic items. To many, artificers seem like wonderworkers, accomplishing in hours what others need weeks to complete.
The description of each of the following infusions details the type of item that can receive it, along with whether the resulting magic item requires attunement.
Some infusions specify a minimum artificer level. You can’t learn such an infusion until you are at least that level.
Unless an infusion’s description says otherwise, you can’t learn an infusion more than once.
Replicate Magic Item
Using this infusion, you replicate a particular magic item. You can learn this infusion multiple times; each time you do so, choose a magic item that you can make with it, picking from the Replicable Items tables below. A table’s title tells you the level you must be in the class to choose an item from the table.
In the tables, an item’s entry tells you whether the item requires attunement. See the item’s description in the Dungeon Master’s Guide for more information about it, including the type of object required for its making.
If you have Xanathar’s Guide to Everything, you can choose from among the common magic items in that book when you pick a magic item you can replicate with this infusion.
You can explicitly take this infusion more than once, and it does not restrict your choices to different items either.

Arrow-Catching Shield
Armor (shield), rare (requires attunement)
You gain a +2 bonus to AC against ranged attacks while you wield this shield. This bonus is in addition to the shield's normal bonus to AC. In addition, whenever an attacker makes a ranged attack against a target within 5 feet of you, you can use your reaction to become the target of the attack instead.
I am talking about the infusion not the class feature
That shield is Rare, and you can only Replicate what's on the list for Replicate Magic Item or else a Common magic item that isn't a scroll or potion. So no.

This thread got me thinking and I was wondering if the Replicate Magic item Infusion (RMII) allowed you to make items that are not on the list beyond all common magic items? For instance could I make a Legendary item with my 14th level RMII or other very rare items that are not on the list.

Yes, you can.
You can explicitly take this infusion more than once, and it does not restrict your choices to different items either.

Can you replicate magical items that are not in the list? Say the Arrow-Catching Shield for example?

Which is why you didn’t already know what the answer was, the class feature tells us.
Just follow the bright pink underlines (that’s my signature eyecatcher), and you will discover this:
