Ok. The new Spelljammer expansions made me look back at old notes. Lv 2 Flame blade for druid is a light sabre that uses wisdom for attack whie Lv 2 shadow blade available to sorcerer, warlock and wizards gives you a Dark Sabre that counts as a melee weapon with finess, light and thrown properties.... (Great for monks and rogues )
Psi Warrior, dex based with a sun blade. Then take magic initiate to get charm person for mind trick.
I would instead go DEX based Eldritch Knight with the Telekinetic feat. Suggestion is closer to mind trick than Charm Person imo. And using Mage Armor feels more Jedi-y as more often than not they stroll into battle in normal clothes and not armor.
Sunblade is a definite want, but no telling when or if my DM will let me get one.
So I was thinking start 1lv monk in armored defence then 3 lv sorcerer. The aberrant origin feature fits best with Jedi I think. Friends is a base Jedi mind trick. Mage hand to move light stuff with mind. Shocking grasp centric with distant spell metamagic gives you force lightning 30ft range. Burn 1st lv slots with shield spell and attack with shadow blade. Catapult spell and charm or suggestion and you have most basic Jedi powers.
2 more lv sorcerer and you get lightning bolt for ship destroying force lightning and casting shadow blade with a 3rd lv spell adds another d8 damage
Go up to 5th lv monk for second attack and use patient defense so incoming attack are at disadvantage. (With AC and shield spell you'll be hard to hit)
2 lv dip in fighter for action surge. Dueling fighting style
3 lv swashbucler rogue for 2d6 sneak attack damage as long as you are in 5 ft of enemy. Fancy foot work let's you add proficiency bonus too initiative and any one you attack dosn't get an opportunity attack when you leave their aria.
If you do get that sun blade trading out Shdow Blade for Haste spell for whirlwind of light Sabre fun.
So, it seems like there's a lot of options to play as a Jedi-like character (although I'm of the mind that Psi-Knight fighter is the easiest, since it feels like that subclass was designed specifically to be the "Jedi" class). The hard part seems to be getting a lightsaber.
The Sunblade is probably the best analogue to a lightsaber... it's quite literally a saber made of light. The hard thing, though, is that it's a rare weapon that relies heavily on the DM being generous enough to let you have one... especially since, as far as "rare" weapons go, this is one of those ones that's definitely more like a very rare or even legendary weapon.
I think Flame Blade and Shadow Blade are also good... the problem is that they're second level spells, so it's hard to get access to them without playing as classes that, for the most part, don't make for great Jedis.
Something like a Flame Tongue sword feels like it would feel close enough, but again, it's a rare weapon that relies on a generous DM.
An alternative is the Green Flame Blade cantrip... this is probably the easiest spell to get, since you can nab it easily with a single level dip or with a variety of different feats... it's entirely possible just to play as a race that gets this cantrip. Now the big problem is that you can't multi-attack with it, so you can't really use it reliably.
My go to build is start toward 3 levels psi warrior/2 levels War mage, then add fighter for guardian style and wizard for consular style. With a sun blade, you can go dex, but it is perfectly viable to go str too, and just go for a long sword.
I'm also a big fan of the Gith races for this too, as they come with some good Jedi-esque psionics.

What are your best Jedi builds?
Psi Warrior, dex based with a sun blade. Then take magic initiate to get charm person for mind trick.
Kensei monk plus most flavors of paladin fit thematically with jedi philosophy even if you can't necessarily move stuff with your mind.
Or you could simply go dex-based redemption paladin for jedi, and either conquest or vengeance for sith.
Otherwise yeah, Psi-Warrior is a good start. Maybe a few levels of barbarian for a sith, or a few levels of cleric for jedi.
Or the Telekinetic feat to move stuff with your mind and skip the mind trick.
