We have seen a myriad of new UA subclasses for warlocks, but I feel like what would be really interesting would be to introduce new Pact options for the entire class that go beyond Chain, Tome, and Blade. If I remember correctly, there was one in a UA a while ago (amulet, I think?), but even so I feel like it would even be easier to introduce two or three new Pact options in a UA rather than trying to flesh out a whole new subclass.
Is there a reason WotC doesn't adapt this feature more?

Because the current three makes a warlock able to cover different parts of combat or outside of combat. Chain is exploration, blade is combat melee, tome is for everything. And otherwise there are too many options that would confuse new players and veterans as well. That is probably why. And the fact that they would have to copy other stuff to make more pacts.

Although I may have said that, I would love to see a pact that lets you summon a spirit animal for up to an hour, redo after long rest. That would be cool. And maybe a patron that is nature, not just an archfey.
