I just subscribed to Master Tier to share my content, does it only share content from complete books or does it share all of my pieces that I've bought?
I ask because I've only bout races, subraces and classes but not full books, does all of that also get shared?
When you enable content sharing in a campaign every player (and the DM) will share everything they have purchased with everyone else in the campaign. There is no distinction between individually purchased items like a race or class to whole books or a legendary bundle. If you bought it from the marketplace, it gets shared if content sharing is on.

If you do buy the entire book, and choose not to share it because you don’t want people reading ahead for example, even if you choose not to share the content, all it will block is their ability to read the compendium content, but the races and spells and such still stay shared for the players to use.
That happens without needing any subscription or content sharing.

This is not correct. Whoever enables content sharing for the campaign can decide to block individual sources as they see fit (if you view a campaign, there's a Content Management button - this is where the sharer can manage this, and everyone else can see what is being shared and what isn't). This does not apply to homebrew content, however.

Additionally, only the compendiums themselves get blocked, all player options (background, base/sub/variant races, subclasses, feats, spells, equipment, and extras) remaining accessible from the character sheets. So even if the DM blocks, say Tasha’s Cauldron for instance, all of the players could still add all of that content to their characters.
You cannot share content in one campaign that is being shared with you in another campaign. However, if you got a Master Tier subscription and your friend with the content was also in that campaign, then you could share his content with the whole campaign through your subscription.
