First of all, the D&D celebration had previews for subclasses for the Barbarian and the Warlock. Are those versions of the subclasses available on D&D Beyond?
Secondly, Icewind Dale: Rime of the Frostmaiden has secrets available for player characters to use. One secret in particular can affect a character’s ability score and racial feats. How do I go about changing that on the digital character sheet?
Firstly, that was only a preview. It was not marked as UA or anything, so it will come out with the book.
Secondly, dndbeyond does not handle everything. If they did, there would be all sorts of things in the sheet, like piety. Secrets isn't even any type of "score" or something that needs to be tracked, you can just add it to your backstory or write it in "Notes"
If you have that secret you can make it as a feat in the homebrew builder.

I saw somewhere that you can just put the secrets in your character notes, but the one I was referring to specifically states that it replaces all of your racial features and ASI so I was wondering what the best way to track that was.
Maybe try making a new homebrew race? Just change the name to match the original name of your character's race (i.e Human), but change all the stats & racial bonuses.

For Frostmaiden secret, I assume you are talking about
the reincarnation secret. the spell literally changes you to be of the new race, so you just pick that new race in the builder rather than your old one. Ie, if you used to be a mountain dwarf and got reincarnated as a wood elf, you just pick wood elf as your race.

I’m a shapechanger. I have none of the traits of the race I’m imitating, but I retain my class features, background, and alignment. I have darkvision out to a range of 60 feet. I can use an action to do either of the following at will:
I can innately cast detect thoughts, requiring no components. My spellcasting ability is Intelligence. The spell’s Wisdom save DC is 8 + my proficiency bonus + my Intelligence modifier.
I can polymorph into any humanoid I have seen or back into my true form. My statistics, other than my size, don’t change. Any equipment I’m wearing or carrying isn’t transformed. I revert to my true form when I die.
seems to me that only applies to the polymorph, but it still says “I have none of the traits of the race I’m imitating (being the player races), but I retain my class features, background, and alignment
although I may be looking too far into it I may just run with the AL rules for it
Uhh... race I'm imitating, which means you have the traits of your normal race, you only don't have the traits of the race your imitating. So you don't have to change anything on dndbeyond at all...
Yeah, my confusion came in with it saying you were a doppelgänger, meaning you’re imitating the PHB races. It even says you revert to your true form when you die (doppelganger). But you’re right that’s the easiest way to do it so that’s how it’s intended

Doppelganger actually says the opposite: I have none of the traits of the race I’m imitating and later My statistics, other than my size, don’t change
So it is a cosmetic change only.
