All aboard the cleric appreciation train, choo choo. Next stops: versatility, healing, support, DPS, subclass flavors, and the ability to have a literal god do you a favor just 'cause you asked.
Honorable mention for the humble fighter. Because fighters are flipping awesome at what they do and combat is sooo much easier when your plan is always "hit stuff until it stops being a problem."
I like rogues because they can be a "mundane" character with no particular superpowers, and compared to fighters I like the more out-of-combat skillmonkey concept.
Paladins are a close second, though. I like the oaths as a character motivation. Plus, like, smiting evil with a magic sword and stuff. It's cool.
Serious Answer: Wizards are my go too class, specifically Divination or Necromancer.
Not so Serious Answer: A level 8 Multiclass is is my favourite class specifically a Rogue 1, Lore Bard 4, Knowledge Cleric 1, Undying Warlock 2; if you like skill monkeys and more spells and snazzy abilities than you can shake a stick at then it is hard to beat but it is a bit convoluted backstory wise.

Drakewarden Ranger for me. I like the idea of having a dragon to ride eventually. I like having the dragon to command and use in combat and exploring situations. I also like summon beast spell. So much battlefield control with a beast and dragon at my command while I stay back and launch arrows. Kinda feels like a jack of all trades - good at many things but expert in nothing.
I love Artificers because I love feeling like I can always find a solution to something, or at least try to. Alchemists are my fave, the elixirs just add more options to mess with.

This is more about flavor than mechanics, but...

Call me basic but I love fighter them extra feats/asi can really help you make a unique character
