Hi is there a way to give a subclass a homebrew Pet at a certain LVL automatically?
Not really. They have recently implemented a system that kind of does that with the Drakewarden Ranger and the Battle Smith Artificer with a statblock built into the class features but nothing like "Rat" added to extras automatically.

There is no way to have it automatically add an animal under Extras, but there is a way to make it part of the class feature itself.
