Depends. What kind of waffles, and what kind of pancakes? But my go to is buckwheat pancakes, dey be da bestestest.
Would it not be better putting the batter in a waffle iron?
I like both but prefer pancakes because they are less trouble and "last" longer - meaning waffles only stay crispy for a short time if that is what you like about them.

Pancakes are good. Waffles are good. If I had to choose one, I would usually choose waffles.
I wanna know how we managed to get convinced that these things are breakfast foods rather than extravagant desserts.
Shrove Tuesday, for pancakes (to use up dairy), in the 1100's.
Early 1900's for Waffles -- commercials mills promoted them in order to sell thh waffle irons and mixes.
Pancakes are older, but waffles became deeply tied tot he aristocracy and wealth because of sugar (which didn't become truly affordable until the late 1800's).
What?
What?
I told you I loved to cook, lol.

I too wish to know this. Same with cereal too.
Cereal, you mean as in breakfast cereal?
That's due to the use of mash -- porridge, stuff like oatmeal -- also sometimes called gruel (which is ultimate cognate with cereal). It was breakfast, lunch, and dinner, assuming one got to eat all three.
barely, millet, buckwheat, rye, and graham were all used prior to the emergence of Oats in the west, and rice porridge is still a staple in the east. Warm with water, not milk. Milk didn't come about until the 1900's.
That goes back at least as far as Babylonia,.
The modern breakfast cereal thing started in the US (drawing from European traditions of Muesli (a mix of grains), which was meant to be cooked in winter and left cold in summer) because a doctor wanted to encourage abstinence from foods that were bad for your health, and so he experimented and then created this thing called cornflakes.
Later, his brother started a company around them, and that was Kellogg's, in about 1905 or so (?).
Oatmeal was around long before that ( some german guy) in the US. That's how Quaker Oats got started.

BUt I have a fondness for "peasant" foods that focus on the "use it up" kind of thinking -- they are the most creative recipes!

That's what french toast is! My family recipe is egg, milk, and bread. Cinnamon too if you have it. Put the eggs in a tray or bowl with the milk and cinnamon then dip the bread in. After that, you fry it in the pan, then eat it with butter and powdered sugar. My nana has this story of when she felt sick while she had just started living on her own, she called her dad, and he dictated the recipe to her over the phone. Prime "use it up" food.

If you mix a bit of ground allspice and ground nutmeg in with the cinnamon, you get a pumpkin spice french toast ;)
For hard core scrump, though, get a little heavy whipping cream, heat it slightly with the cinnamon, nutmeg, and allspice, let cool, then whip up into whipped cream with a basic mixer. Top it over your french toast, pancakes, or waffles in thick dollops.

Answering early: both. I like maple syrup on pancakes and molasses on waffles.
I really like D&D, especially Ravenloft, Exandria and the Upside Down from Stranger Things. My pronouns are she/they (genderfae).
Probably pancakes. Usually when I have waffles they are low quality toaster waffles and when I have pancakes they are homemade and delicious.
Depends. What kind of waffles, and what kind of pancakes? But my go to is buckwheat pancakes, dey be da bestestest.
