the thing about the dark side is that it is like an addiction, once you start using it, it will be hard to stop using it. Also has there ever been any accounts, ether legends or cannon of an dark side user who fully embraced the dark side and did not end up being evil? there are a few dark side users who start their path with good intentions and a few who attempted to dabble in both the light and dark sides to mixed results, but i do not think that there has been any case of an proper dark side user who donated to chairty and was an upstanding citizen / pillar of the community. (i have only gotten expanded universe stuff via secondhand accounts, so i might be missing something)

Nobody sees themselves as “evil.” Palpatine did not consider himself “evil.” Anakin specifically spouts altruistic intentions, what made it “evil” was when he was asked about people who didn’t agree with his ideas his response was “Then they should be made to listen.”
The Dark Side is not inherently evil, nor the Light Side inherently good. They were based off of the concept of Yin and Yang. The only dichotomy they specifically do not represent is good/evil. That being said, The Dark side is more powerful, and evil seeks power. They were already more predisposed towards “evil” when they chose The Dark Side. It did not make them that way, they were that way, that’s why they chose the Dark Side.
I would say the sith are more fun than the jedi ,but that's only if your strong. Jedi kill eachother all the time. They always end up betraying their masters. You can only kill so many apprentices before you find yourself on the other end of the blade. Even if you never have an apprentice the life of a sith is still one where you need to be cautious. If you have enough power a sith may seek you out to try take it.
Being a jedi can be cool unless the 501st legion comes knocking on my door in which case being a jedi is a terribly bad thing.
The gray jedi are kinda cool. I like what they represent however being a gray jedi must be hard. Both jedi and sith will ostracize you making finding allies incredibly useful. Unless you plan on pulling a ben kenobi ,or yoda and going full on hermit in the middle of nowhere. That last bit could also apply to the other two ,but it would probably be a very lonely potentially boring life.
If I were in the star wars universe I would want to be a smuggler or a bounty hunter. Smuggler for anyone that wants to travel the galaxy ,but less confrontational ,and less fighting. Bounty hunter if you wanna be a cold blooded killer.
I like mandalorians because mandalorians are cool flying around burning down villages ,and shooting down warriors like target practice. Yeah! The jedi are next! cause were mandalorians and... Were still salty about the mandalorian wars.
I'd probably be a gray jedi. Kinda. I'd use both dark and light sides of the force ,but my primary occupation would be smuggling. Not trying to build any order. Not trying to be a hero to retake the galaxy from the empire. No matter what the rebellion does its funny because they will always be a rebellion. An uprising waiting to be squished like a bug. That's actually a great analogy in a way. 'like a bug'. That's what the rebellion is. A cockroach that refuses to die. I respect that about them ,but it seems to me... It doesn't matter how many star destroyers or starkiller bases they destroy because the empire/first order will always be bigger ,and better. Only reason the rebellion did so well was because plot armor... *cough* *cough* Luke Skywalkerr ,and Ray *couch* *cough*...

Being a smuggler that uses both sides of the force would be neat because your primary goal in life is travelling around the galaxy ,and you make money doing it. You could easily be a part time scavenger. Why? Well for starters your ship would probably look like a plain ol scavenger's ship ,but your like the millennium falcon. Not so pretty on the outside ,but tons of power on the inside. Your ship will get you where you need to go. If your smart you will have tons of stealth cloaking devices ,and plenty other stealth devices for backup. Your goal is to stay hiding. Your not the hero. Let someone else be a martyr. The scavenger job is your cover job. Your legal job. When you stop at a ship port nobody thinks anything of you other than the fact that your just a scavenger. Low key your selling illegal smuggled goods. Ain't life great? Just be careful where you use the force. Don't be using force meditation near the death star. If you wanna practice the force go to the outer rim or unknown space. Stay from the core worlds if you wanna practice the force. While you travel the galaxy you could probably also take finding jedi/sith artifacts as a side hobby. This is what I'd do.
not to be the fun police here, but technically grey jedi are not really a thing and the light and dark side contradict each other. Imagine for simplicity that using the force is like trying to get an closed, presumably locked door. The jedi would merely knock on the door and politely wait for the person on the other side to open it, weras a sith might instead try to break or force open the door. The jedi (at least when they have not lost their ways as we see in the prequels) submit themselves to the will of the force, seeing themselves as servants much like an cleric, weras an sith sees the force merely as an tool, something that gives them the power they need, much more like an wizard or an warlock who shows no love for their patron and made their pact for the power it provides
that being said assuming you are playing an star wars RPG that should not be much of an problem at all

Star wars is funny because it has always had the jedi and sith. two polar opposite extremest views the jedi are all peaceful calm no emotions. They shun emotions as its seen as weakness. ,and the sith are all angry volatile all the time using their emotions like power. Then you have the gray jedi who utilize motions with... more control than the sith... I think? The gray jedi are the middle man which seems more balanced than completely eradicating the dark side or the light.

I would be a gray jedi because well I am human to give up or suppress emotion would just make me a food powered robot but to have no control over my emotions would be as bad if not worse. So I would lean to the light side but never fully join it
I hope everyone here realizes that "Grey" are not a thing. The ones who are the balance are the Order of the Bendu, also known as Bendu. The Jedi colors are greens and blues, the Sith are reds and oranges, and the Bendu are a deep purple.

I change my vote to Grey, because balance in all things.
