I think stick to one Oath. That's how it is rules as written. I'd personally pick Redemption as the subclass since it fits with the backstory, although he would have chosen his Oath before hand if he lost the Cleric at Level 5. Therefore, here's how I think we should do it:
Level 1-2: Base Paladin, Level 3-5: Oath of the Crown, Level 5: Switches to Oath of Redemption, Level 6-8: Undying Warlock
