Vinland Saga was fun. First season has a lot of action/figthing. Second season slows down a bit and goes a different direction, but fairly enjoyable for different reasons. (And since you'd be binging S2, wouldn't have the "I gotta wait another week for the next episode?" issue I had.)
Promised Neverland is also nice. And while they don't have S2, it seems a general consensus is that S2 wasn't near as good anyways.
Also has Attack on Titan S1 which was good. (And there's also a nice Attack on Titan: Junior High parody you can watch afterwards on YouTube.)

Alright, then I have a few suggestions, if you're still interested that is
If you're an action fan, I recommend Demon Slayer. Sure, it's a very detailed anime, but it's also very accepting to new watchers. It's also still going, and ranked no.1 for graphics out of all anime, so if you really like it then you've got lots to look forward too. One of my personal faves. 15+
If you're a rom-com kinda guy, well... there's quite a bit. Romantic killer (As cheesy as that title sounds) is pretty good, and defo really funny. And, believe it or not, less romantic than you might think. Super funny, and actually pretty well written. Just, get through the first episode, it's... kinda weird. But a good weird. 12+ (I think)
If you want more Rom than Com, then go Toradora. Yes, I'm biased, this is my favorite anime of all time, but also one of the first I watched. It's written so well, and is still a rom com. But be warned, as much as it's a nice and easy watch, I suffered from three days of post-anime-depression after finishing it, and I don't wish that on anyone. 12+
If you want pure comedy gold, go Komi can't communicate. Just... trust me, one of my favorites, and it has the best characters too. PG
