The reason for this is that they choose this for a very different reason than what most creatures choose lichdom for: these guys don't want power, they want freedom.
Most sugarliches are former fiends, celestials, or intelligent undead that wanted freedom from their alignment lock, or mortals who wanted to express themselves through their physical form.
