After discovering Hero forge from your guy's stuff, I find it great to use (really helps me to visualize characters and such). I might use it to make some of my RP characters on here.

I never focus on ability scores much I usually just give them two low scores, one high score, and make the rest average
To be honest I don't understand that mentality. Characters definitely have dump stats where I don't mind if it's low. (Realizing an Archfey Warlock I've got doesn't have the STR to carry her own starting equipment with Point Buy was slightly amusing.) But I also enjoy getting nice stats to allow for more versatility with builds.
I guess I view the mechanics as first and foremost with figuring out a character and the personality second on account of flavor being free. So I go for mechanics I like first and then graft a personality on afterwards.
I have never ever been able to do good mechanics on dnd characters. I’m not even good at dnd at all, I just do some good roleplaying.
I find my favorite characters come from a fun idea or concept I have and I build the mechanics secondarily. I’m not a fan of having intentionally poor stats though, most of my characters are pretty well rounded.
